How to shop for a knife by sound

Watch this one-minute video to learn how to shop for an economical knife by sound.

Not all knives are created equal, especially in the $50-or-less range. Some $20 knives even outperform pricier options.

Most budget-friendly knives are made from plain stamped stainless steel. However, some brands add carbon to their steel, making blades harder and better at holding an edge. This toughness, though, comes with certain trade-offs. Watch the video to learn about these drawbacks.

CAUTION

Please exercise extreme caution when using and washing the blades we sharpen for you, especially if you haven’t used very sharp blades in a while.

Important Tips:

Never run your fingers along the cutting edge to test the sharpness. Instead, use the three-finger test by lightly pressing on the blade edge and wiggling your fingers back and forth to feel the sharpness. Remember, never slide your fingers along the blade.
Use a cleaning brush on a wand to clean blades, always moving away from the cutting edge. Avoid using a leading edge motion.
Do not clean sharp knives in the dishwasher.
